Tradition of fine Italian cuisine continues

Cranston, RI (September 21, 2016) – Alpine Country Club has announced that Elio Scanu has been named Executive Chef. In this position, Scanu will be responsible for all facets of the Food and Beverage department including staffing, menu planning, ordering, vendor monitoring, food production, inventory, catering and budgeting.

An avid researcher in the culinary field, Chef Scanu received his International Trade diploma from ICE, Italy; his B.S from Saint Michael’s College in VT; and his Master Certificate in Hospitality Management from Cornell University in NY. He also holds a Master Chocolate Maker diploma from Ecole Chocolat and trained as “Maestro Gelataio” in San Remo, Italy.

“Chef Scanu brings with him a wealth of culinary knowledge and experience,” said Leonard Accardo, Jr., president of Alpine Country Club. “He has trained with some of the finest Italian chefs in the world and has been awarded for his exemplary cuisine. We believe he is an ideal fit to lead the culinary team at The Alpine.”

Prior to joining The Alpine, Chef Scanu was living in Salt Lake City, Utah where he came to work for Sinclair Oil Corporation for its Hotels and Resorts division as Executive Chef and Food and Beverage Director at Snowbasin Ski Resort, a Sun Valley Resort. After this tenure, Chef Scanu opened Zucca Trattoria and Specialty Market. After selling his interest in the project, Chef Scanu was appointed Director of Operations for Cucina Restaurant Group, opening Caterina, Vivace and Caterina Events and Banquets. Chef Scanu then went to restructure and manage all food services and catering for L-3 Communications as Corporate Director of Food Services.
